Before I got pregnant the first time, I was not much of a breakfast person. In college I would SOMETIMES get up early enough to make a Belgian waffle or (let’s be honest: TWO) or have a bagel. See what those breakfasts have in common? CARBS. All carbs, all the time. The only non-carb in those breakfasts was butter. (Which according to Lindsay Lohan in Mean Girls IS a carb.) But when I first got pregnant, my midwife insisted on protein. I needed it, apparently. My baby needed it. And now, I really don’t start the day without eggs.
And because I was living in Texas when I started loving eggs, this means I got all KINDS of Texas eggs. Eggs con chorizo. Eggs with refried beans. Egg tacos. Even eggs on top of enchiladas for dinner at Chuy’s. Give me ALL THE EGGS ALL THE TIME. Breakfast, lunch, dinner. Alone, on top of things, within things. I don’t even care. Just give me the eggs, please.
One of my favorite partners for eggs is the lovely, beautiful avocado. (Another food I did not like until a few years ago. What was WRONG with the younger me?) This is a beautiful, simple breakfast. Half an avocado, lightly salted. Topped with a runny egg (also lightly salted) and a sprinkle of parmesan cheese. I like parmesan for this because it’s dry and keeps a little of the firmness to break up the soft texture of the egg on top of the slightly less soft texture of the avocado. If you don’t like eggs over easy or sunny side up, you won’t appreciate the beauty of this photo.
My heritage of egg loving comes from right here in Texas, which is one more reason to love Lone Star eggs. Available at Walmart, but locally sourced right here in Texas.
