When Rob and I moved to Greensboro, North Carolina for my grad school, we chose to live in an urban apartment just on the edge of the small downtown. The best part of this, of course, was that we were walking distance from great coffee, food, and—most importantly—desserts. There was ice cream, cheesecake made fresh every day, and my favorite dessert restaurant with rooftop dining and the best ganache ever. Did I mention I gained a little weight in grad school?If you’re unfamiliar with ganache, it’s typically made by heating heavy cream, pouring it over chopped chocolate, and stirring until smooth. It has a texture like an icing, and is often used as a glaze on top of a cake, between the layers of a cake, or as the filling for a truffle. I’d eat it straight from the pan, but that’s how I roll.

I took one bite of this and knew I was dealing with a completely over the top dessert.Creamy, rich, smooth: this is a high-class dessert. And at 160 calories, you could eat two in one sitting. (I’m not saying that because I ate two in one sitting. But I may have, in fact, eaten two in one sitting.) The minty freshness of the Chocolate Mint Ganache made my night and rivaled our household favorite mint chocolate ice cream. I will be eating these again.
