Ever notice how some of the best breads are really cakes that we’re calling bread? A lot of banana breads, carrot breads, applesauce breads, blueberry breads and other breads are totally cakes going incognito.
There is NOTHING incognito or subtle about this double chocolate banana bread. It’s 100% cake. (That I’m calling bread.) Yes, there are three bananas in it. And that’s where the healthy ends.
This is so rich and amazingly moist. Perfect for gifts either as a whole loaf, or baked in mini loaf pans. This is actually based on my chocolate banana muffin recipe I shared at Sparkles and a Stove (which is an unfrosted cupcake calling itself a muffin).
The best way to give this as a gift? Call it a bread. Call it healthy, because there are three bananas in it.
- 1 1/2 cups flour
- 1 tsp baking soda
- 1 tsp baking powder
- 1/8 tsp salt
- 1 tsp cinnamon
- 3 T powdered cocoa
- 3 ripe bananas, mashed
- 3/4 cup sugar
- 1 egg
- 1 tsp vanilla
- 4 T vegetable oil
- 1/2 package semi-sweet chocolate chips
- Preheat oven to 375. Grease a bread pan.
- Mix first six dry ingredients together. Set aside. Mix the mashed bananas and everything but the chocolate chips until well-combined. Fold into the dry mix until incorporated, but do not over-mix. Stir in the chocolate chips.
- Pour into the pan and bake for 35-45 minutes until a toothpick will come out clean.
I’m linking up again with the 12 Weeks of Christmas Treats. If you haven’t been checking out these links, you are missing some fabulous ideas for Christmas gifts. With plenty of time to plan for the crazy month of December. Put a bow on it! (Kind of like putting a bird on it, but a bow.)
