Remember when I made Pad Thai Pork and told you that I would have more recipes coming with those sauce ingredients? Here you go: Pad Thai French Fries!
Last month when I hit up Houston Dishcrawl, I had some amazing french fries at Boheme. They stuck with me, and I’ve been dying to try my hand at them ever since. When I got potatoes from the Rawfully Organic Co-op this week, I knew it was time! With a hint of lime, the sweetness of hoisin, and the richness of peanuts, these are not your average American french fries!
I’m not sold on a homemade french fry recipe (I made these based on the Beautiful Mess recipe and they were too oily/easily burned), so I’ll just give you what makes these fries special in the recipe. Please pass on a great homemade fry recipe if you have one! If you’re serious about your fries, you can check out this cool potato slicer or this deep fryer, which I think at some point I might bite the bullet and buy. Because I want to fry all the things and then put hoisin and peanuts and cilantro on them.
- French fries (I think skinny work better than thick for this, but any kind will do)
- 3 T Hoisin Sauce
- 1 T Fish Sauce
- 2-3 t Sriracha (to taste)
- 1/4 cup crushed peanuts
- 1/4 cup chopped cliantro
- 1/2 lime
- Mix the Hoisin and Fish Sauce in a small bowl until incorporated. When the fries are still hot, drizzle this mixture over them. Drizzle or dot the plate with Sriracha, then garnish with peanuts and cilantro. Squeeze the juice of 1/2 a lime over the top and eat while warm.
- *If you want an added kick, you can add crushed red pepper.
At first taste, I thought I had missed the mark a bit. (And I do think I was missing something from Boheme’s recipe—Sesame Oil?) Then I made sure that each bite had every component. Something about the balance between the nuttiness, the sour lime, the sweetness of Hoisin, and the heat of Sriracha really made it complete. And yes, I ate them with a fork.
This is definitely a little bit of a surprising dish. Rob came home from work, tried a bite without me explaining what I was trying to do, and then dove right in and finished the plate. Definitely a step-cousin to the typical American side dish, Pad Thai French Fries have a little bit of magic that keep you coming back for more.
